Best Thing. Ever: Zuni Chicken

I tend to describe many MANY things as the best thing ever. Afternoon beers. Buffy. Red wine. This American Life. My husband. What can I say – I really, enthusiastically like a lot of things.

When it comes to roast chicken, the chicken from Zuni Cafe in San Francisco really is the BEST THING. EVER.

The recipe is all over the Internet, so I won’t repost it here, but I will implore you to go out and make this chicken immediately. I use the Smitten Kitchen recipe, but you can also read about it here, here and here. Ooh, that reminds me – Smitten Kitchen is another BEST THING. EVER.

I actually came across this recipe last year and I was intrigued. I tried it a few times and I was impressed, but not blown away. I always just made the chicken and skipped the bread salad because the salad seemed like a lot of work. I was so so WRONG. When we were in San Francisco in July Jason suggested that we try a cafe that our friend had recommended for dinner. Lo and behold, it was the Zuni Cafe. My mind quickly twigged and I excitedly realised that this was THE ZUNI CAFE. Home of the WORLD’S MOST AMAZING CHICKEN. I think we had been seated for about two minutes before I yelped, CHICKEN! to the waiter. I might have ordered the chicken before I ordered a champagne and that is saying a lot. 45 minutes later the chicken was in front of us and it did not disappoint. It was moist and delicious and amazing and just like a better version of the chicken that I had made at home. I was chuffed. Then there was the bread salad. O.M.G. Let’s just say, that this bread salad MAKES the chicken. Since this fateful meal I’ve endeavoured to recreate the bread salad at home and it is so worth the effort. There are a lot of steps, but it’s not nearly as complicated as it seems.

Now I just need to find a way to recreate the shoestring fries from Zuni and we’re golden.

  1. I’ve heard a lot about this chicken as well. I used to live in the San Francisco Bay Area and never managed to visit Zuni Cafe. Seems like recreating this chicken and bread salad is definitely worth a try!
